SCA Brewing Intermediate
Service Description
Further explore the variety of methods for brewing coffee and the brewing variables that affect quality. Brewing Intermediate provides hands-on learning with equipment, grind-profiles and parameters. You’ll learn how to analyse brewed coffee, scientifically measure coffee strength and chart extraction, using a digital refractometer. This course is for someone interested in a more in-depth, scientific approach to brewing. The Intermediate level is suitable if you are already part of the industry, working in the field covered by the module, and have a firm knowledge of the basic skills. Experience working in the field is recommended for this level. The modules SCA - Introduction to Coffee and SCA - Brewing Foundation are recommended but not required. You will need to pass the SCA - Brewing Intermediate exam prior to doing the SCA - Brewing Professional exam. CLASS CONTENT: 1. Coffee Knowledge History of research over the past 60 years How Roast Level affects on the brew Freshness in Coffee Grinder Burr Types and its affects 2. Brewing Guidelines: Seven Essentials Elements of Brewing Coffee-to-Water Ratio Grind Setting Brewing Time Water Temperature Brewing Turbulence Water Quality Filter Media 3. Brewing Methods and Brewing Equipment Percolation/Pour-over: V60, Bottomless, December, Kalita, etc. Immersion: Frenchpress, Clever Vacuum (Syphon), Aeropress, Cold Brew, Ice Drip 4. Brewing Process Wetting Extraction 5. Brew Analysis: “Extraction” and “Strength” Sensory analysis Measure by Refractometer to get data 6. Maintenance Brewing Equipment DURATION - Training: 2 days of 7 hours (from 10.00 to 17.00) / Exam: 1,5 hours PARTICIPANTS - 3 to 6 EXAM – Written online and practical during the course INCLUDED - Notebook, Usage of machines and ingredients, Lunch LANGUAGE - The training will be held in English.
